Almond Horns Try this: Divide 10 oz. of almonds in half. That is, two stacks of about 5 oz. each. Combine one stack with 2 oz. vanilla extract and one oz. ginger brandy in food processor or blender. Whiz them up, stop whizzing and push down the big chunks once or twice and whiz again until you have almond paste. Chop, or slice, the other stack into pieces. In a mixing bowl, combine the almond paste, sliced almonds, 2 egg whites and 2 tbs. sugar. Mix thoroughly. Grease a cookie sheet and form the mixture into little horn shape cookies. You will need to rinse your fingers a few times because they quickly become too sticky to form shapes. Bake at 350F for 20 minutes. When they cool hide them. This is not the kind of cookie you can have just lying around the house.
